Urgh! Too much green.
Not quite what you would expect when you hear 'egg salad'. Most of you probably imagined ground up egg with mayo and the ingredients of you choice spread between two pieces of bread. I just couldn't do that to the eggs, so they went into a tossed salad with carrots, celery, and onion. That way we can all see their cute little expressions.
